Quick & Easy, Thick & Chewy, Food Processor Pizza Dough

On Friday evenings, I like to make homemade pizza for supper. I can make a pepperoni pizza (my family's favorite) in about 20 minutes of hands-on time, for approximately $3, using ingredients purchased as cheaply as possible.

I've tried lots of different pizza crust variations, including the little crust mix packets at the store (blech!) and some very good, but horribly time-consuming yeast dough recipes. My favorite recipe, hands-down, is the food processor pizza dough recipe from Amy Dacyczyn's Tightwad Gazette. This recipe is so quick and easy, has a nice texture, and tastes really good!

To make it you will need:

1/2 to 3/4 cup warm water
2 1/4 tsp dry yeast
1 tsp sugar
2 c unbleached, all-purpose flour
1 Tbsp canola or vegetable oil
1/2 tsp salt

First, combine 1/4 cup of warm water with yeast and sugar. Stir to dissolve yeast. Let stand 5 minutes until bubbly:


In food processor, blend flour, oil and salt for 5 seconds. Add yeast mixture and process 10 more seconds until blended. With processor running, slowly drizzle in warm water, until the dough forms a ball. Don't overprocess!

If you don't have a food processor, you can combine the flour, oil and salt in a mixing bowl with a fork. Then make a well in the center, pour the yeast mixture, and another 1/4 cup warm water into it, and stir until it forms a ball. If it seems too dry, gradually add small amounts of warm water until it's the right consistency. Turn the dough ball out onto a lightly floured surface (I prefer to use a Silpat) and knead by hand for 4-5 minutes, until it's smooth and elastic.

Place dough ball in the center of an oiled pizza pan. Cover with a bowl, and let rise for 10 minutes:


With lightly oiled fingers, press dough out:


Top with your favorite toppings:


We use spaghetti sauce instead of pizza sauce. It's cheaper per ounce, and we like the slightly sweeter flavor. I found these 28-ounce cans at the scratch and dent for only 35 cents:


I only need about 1/4 of a can to make one pizza. You can also make a "stuffed crust" pizza by putting sticks of mozzarella around the perimeter of the pan, and folding the crust over them. Make sure to pat the dough up the edges of the pan so you have enough to fold over.

Bake in a preheated, 425-degree oven for 15-20 minutes. Here's the finished pizza:


My family loves it! We never have leftovers.

Do you think that this can be made very well if I don't have a food processor? Can anything else replace the food processor? We use the packets for the crust and I don't like it, my family doesn't mind it but they also like frozen pizza. Yuck! Would love to try it but it may not save me "dough" if I have to buy a food processor. :)

Thanks for sharing that! I also like when pictures are posted - it really helps. And .. that looks yummy! My husband loves the chef boyardee pizza in the box... but I like to make my own dough. I think I need to whip up some dough balls and freeze them.

Carla, I have some kneading hooks for my mixer and use that to make dough.

I hate cleaning my tiny food processor so I never use this recipe.
I think I'll try it tonight in my bread machine as Friday night is our pizza night. And we have fresh basil in the garden for margherita pizza.

This is a fabulous recipe, what a find!! I'll definately give it a go. I love to make homemade dough but without a breadmaker it's pretty time-consuming and I don't have much spare time lately!! Will try this one.

You can also use frozen bread dough found in the freezer section. They come about 4 - 5 loaves in a bag. I, too, make my pizza dough from scratch but every once in a while, I use this bread dough. I take one loaf out in the morning, place it in a greased bread pan and allow to thaw out and rise during the day. Come dinner time, it's ready to roll out. This way is pretty economical, too! :)

I heart the Tightwad gazette books! Her husbands chili recipe is the best we have ever tried. have yet to try the pizza crust though. And the pictures DO help. I guess I need to remember that next time I post a recipe.

That looks yummy! I'm making homemade pizza for dinner tonight - except I actually got some really yummy pizza bases reduced (I bought all they had & put them in the freezer!) We usually have pizza once on the weekend. I make 2 or 3 (depending how many bases in pack) & we have leftovers for lunch the next day! Our favourite is ham & pineapple! I should try making the bases - once my supply runs out!

I never thought of "rolling" out the base like that. I usually do it with a rolling pin on the worktop and I have been wondering how I could get it the same shape as the pizza tray. Thanks. :o)
