By Request: Heather's Famous Beef and Noodles

Renee requested the recipe for my "famous" (around here anyway) beef and noodles, as pictured in A Typical Day at Our House. Here it is...enjoy!

8 ounces (2 cups) uncooked rotini pasta
2 tablespoons vegetable or canola oil
1/2 cup chopped onion
1/2 of a green bell pepper, chopped
1 clove minced garlic
2 cups cooked beef roast, diced
1 can cream of mushroom soup (or cream soup substitute)
3/4 cup water
2 tsp beef buillion
1/4 tsp black pepper
1/8 tsp each onion powder and garlic powder
Pinch of ground cloves
1/2 cup sour cream

1) In a large pot of boiling water, cook pasta until just al dente (about 6 minutes).

2) While pasta is cooking, saute onion, green pepper, and garlic in oil over medium heat until tender. Stir in cooked beef, cream soup, water and seasonings. Heat to boiling, stirring occasionally. Reduce heat to low, cover, and simmer about 15-20 minutes to allow flavors to blend.

3) Stir in sour cream and cooked pasta. Heat through if needed. Serve with salad or veggies.

I am hehehe-ing over your comment. Way to funny! One of these days we should do a tag-team post or post together on all the things we have lost due to procrastination, lol!

I once lost $100 because someone wrote me a check as a birthday present and I put off cashing it until the bank wouldn't cash it without permission from the other person, and I was to embarrassed to ask them to write another one.
